Potato Recipes!

On our KCTV5 Better KC show today, we talked about Potato Lover's Month. I promised a few great recipes from the Idaho Potato Commission and that I'd share one of my own favorite recipes. Well, here they are!

First up we'll start with my recipe for incredibly easy ranch potatos

Easy Ranch Potatoes

  • ¼ cup olive oil
  • 1 packet ranch seasoning mix
  • 2 pounds small red potatoes (quartered)

Directions

Step 1: Preheat oven to 450°F

Step 2: Place potatoes in a gallon-size plastic bag and add oil

Step 3: Close the bag and toss to coat.

Step 4: Add ranch seasoning mix and toss until well coated

Step 5: Bake in baking pan at 450°F for about 30 to 35 minutes or until potatoes are brown and crispy

Sweet Potato Casserole

Sweet Potato Casserole

 

INGREDIENTS:

1 ½ pounds sweet potatoes

 

Sweet Potato Mixture:

¾ cup sugar

½ tsp vanilla

1 egg, well beaten

1/4 cup melted butter

 

Crust Topping Mixture:

1 cup brown sugar

1/3 cup flour

1 cup chopped nuts (pecans or walnuts)

½ cup melted butter

 

DIRECTIONS:

Step One

Cut the sweet potatoes in quarters and boil them until the skin easily peels off and the sweet potatoes can easily be mashed. About 30 minutes.

 

Step Two

Mash the sweet potatoes and combine with the sweet potato mixture. Next, spread the mixture evenly in a baking dish.

 

Step Three

In a separate bowl, combine the topping mixture and evenly distribute it on top of the sweet potato mixture.

 

Step Four

Bake for about 30 minutes on 350 degrees.
