Easy Ranch Potatoes
- ¼ cup olive oil
- 1 packet ranch seasoning mix
- 2 pounds small red potatoes (quartered)
Step 1: Preheat oven to 450°F
Step 2: Place potatoes in a gallon-size plastic bag and add oil
Step 3: Close the bag and toss to coat.
Step 4: Add ranch seasoning mix and toss until well coated
Step 5: Bake in baking pan at 450°F for about 30 to 35 minutes or until potatoes are brown and crispy

Sweet Potato Casserole
1 ½ pounds sweet potatoes
Sweet Potato Mixture:
- ¾ cup sugar
- ½ tsp vanilla
- 1 egg, well beaten
- 1/4 cup melted butter
Crust Topping Mixture:
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped nuts (pecans or walnuts)
- ½ cup melted butter
Step 1: Cut the sweet potatoes into quarters and boil them until the skin easily peels off and the sweet potatoes can easily be mashed. About 30 minutes.
Step 2: Mash the sweet potatoes and combine with the sweet potato mixture. Next, spread the mixture evenly in a baking dish.
Step 3: In a separate bowl, combine the topping mixture and evenly distribute it on top of the sweet potato mixture.
Step 4: Bake for about 30 minutes at 350 degrees.
